Arisi Payasam (Rice payasam)


Arisi Payasam or Rice Payasam  is a rich delicacy prepared with Milk and Rice.. It takes little time to prepare.. But the taste is extra-ordinary. Try this mouth watering payasam and surprise your dear ones.. 

Recipe follows...

Ingredients:


Basmathi Rice          - 1/4 cup
Boiled Milk              - 5 cups
Brown Sugar               - 1/4 cup
Cashew Nuts            - 6 or 8
Raisins                     - 6 or 8
Ghee                        - 3 tbsp


Procedure:

  • Wash Basmathi Rice... Heat little oil in  a heavy bottomed vessel. I normally use my heavy bottomed cooker. Add rice to the cooker. Saute well.
  • Add boiled milk to the rice. Cook it in medium flame.
  • I would suggest to drop a small plate in the payasam while its cooking, so that milk won't overflow and come out.
  • Keep on stirring in between.
  • When the rice is half-done, add brown sugar. If you don't have brown sugar, can use plain sugar as well
  • Keep on stirring in between. When the rice is completely cooked, we are done with our payasam.
  • If you want the payasam to be more thick, cook it for some more time and if you want the payasam to be little watery, add some more milk.
  • Saute Cahew nuts and Raisins in Ghee and add to Payasam.
  • Your delicious payasam is ready..

Pasi Parupu Payasam ( Moong Dal Payasam (or) Moong Dal Kheer)

Pasi Parupu Payasam Another recipe to prepare and cherish during auspicious occasions.  Pasi Parupu Payasam, my kid's most favourite payasam. Though Moong dal has good amonut of protein and fibre, it has very low  fat and carbohydrate. Its very easy to digest too.. Your tasty, protein high and light on stomach Moong Dal payasam recipe follows..

Recipe For : 2


Preparation Time : 30 minutes


Ingredients:


Pasi Parupu                - 1 cup (Moong Dal)
Jaggery                      - 3/4 cup (Vellam)
Milk                           -  1 cup
Cashews                    - 6 to 8
Raisins                       - 1 tbsp
Chopped Coconut      - a handful
Ghee                           - 2 tbsp

Procedure:


  • Dry roast Pasi parupu until it leaves nice aroma and Cook it well in enough water. I used to cook for 5 continuous whistles. Chop coconut into thin pieces. Roast cashew nuts,  raisins and chopped coconut in ghee and take them out.
  • Crumble jaggery into little pieces and add it to cooked pasi parupu. Cook in low flame so that jaggery gets melted. Adding 3/4 cup of jaggery was enough for us. You can increase the jaggery qunatity to 1 cup if you are a sweet lover..
  • After jaggery had melted add 1 cup of boiled milk to it. This is done to adjust the payasam consisitency. You can increase or decrease amount of milk according to the consistency you wish. 
  • Add roasted nuts, raisins and coconut to the payasam. You can also pour in some more ghee at this moment.  Enjoy your Pasi Parupu Payasam!!!

Tamil New Year Celebration

Onam Sadhya

Onam Sadhya Onam ashamsakal!!

Sadhya is the feast which is prepared on the auspicious day of Onam. I always wanted to prepare full onam  feast at home.  This year i went ahead with the idea. Since I have never tasted sadhya, I was excited to prepare at home and gathered all the recipes with the help from friends and Google. So i am not sure whether the recipes are authentic. But i swear the taste was too good. 

Cooking Kerala Cusine was  totally a different experience for me. It is completely different from Tamilnadu style of cooking. One distinct thing i noticed was coconut was used in almost all the recipes and the use of coconut oil gives nice aroma to the dishes.  I am just giving insight to the Onam sadhya recipes. The recipe number varies up to 64.  I prepared the feast with 17 dishes..

  1.  Banana  
  2. Banana Chips. Jaggery coated  banana chips is also used for serving.
  3. Pappad
  4. Salt
  5. Use Lime pickle, Mango pickle and Narthangai pickle. I didn't have any pickles at home. So i skipped this..I served Puli- Inji which is also usually served with it. It is nothing but Ginger is cooked in tamarind and jaggery water with turmeric and chili powder. Hence its a perfect blend of all tastes
  6. Cucumber Pachadi - Cucumber is boiled first. yogurt and Coconut, green chili, mustard seeds and cumin seeds paste is added to it and then it is seasoned.
  7. Olan - It is prepared with Ash gourd (Vellai Poosanikai) and White eyed beans (Thattam Payaru). Both are boiled separatley and its cooked  together in coconut milk, Green chili, Curry leaves. Drizzle coconut oil.
  8. Cabbage Thoran - Shredded cabbage is sauteed together with small onion, coconut , cumin , green chili and garlic paste.
  9. Aviyal - Vegetables cooked with coconut paste.
  10. Rice
  11. Parupu & Ghee -  Boiled Toor dal with Ghee
  12. Kerala Style Sambar - Its similar to varuthu aracha sambar. Since we are also grinding small onion together it results in very different sambar.
  13. Senai Kizhangu Pulissery - Yam is boiled first and coconut, small onion, cumin seeds, turmeric powder and red chili powder paste is added to it. Also add yogurt and seasoning.
  14. Kerala Style Tomato Rasam - Its totally a different rasam. Tomatoes are smashed and boiled together with red chili, garlic, coriander seeds and pepper paste.
  15. Spiced Buttermilk - Butter milk with Ginger, Cumin seeds and curry leaves.
  16. Kadalai Parupu Payasam - Channa Dal cooked with Jaggery and coconut milk. One of my dear friends prepared this payasam for her onam celebrations. I also used this for the post.
  17. Paal Adai Pradhaman - I used ready made Palada for this recipe. Its cooked fully in Milk and Jaggery.

Vinayaga Chathurthi

Vinayaga Chathurthi Happy Vinayaga Chathurthi!! How did your celebrations went on?? We had great celebration at our home.. My kid played a very active role in the celebration. He helped me a lot in making kozhukattai.  He was very keen to know the stories behind the celebrations too.. Felt very happy and proud that something good has passed on to next generation.. 
Here are the tidbits of our festival foods..

Thengai Pooranam Kozhukattai:


Grated coconut is mixed with sugar and it is stuffed inside rice ball. It is then steamed. To make it healthier, i used Brown sugar. You can make kozhukattai either with molds or with hands. 

Ammini Kozhukattai:


This kozhukattai will be spicy. Small balls are made from rice flour and then its seasoned with mustard seeds, urad dal, cumin seeds, channa dal, dry red chili , curry leaves and grated coconut. Remember to add salt while kneading the kozhukattai dough

Black Channa Sundal:


Black channa is boiled with little salt and then its seasoned with mustard seeds, cumin seeds, dry red chili, curry leaves and grated coconut.

Paal Payasam:

Make small balls from kozhukattai dough. Boil it in water. When kozhukattai is cooked 3/4 th add jaggery to it. Add boiled milk after kozhukattai is cooked fully. Add grated coconut and switch off the flame immediately. You can also use coconut milk in the place of milk.

Did you notice?? All the foods we prepare on this special occasion are either steamed or boiled. Eat healthily like Pillayar and live happily!!
